{"id":156,"date":"2026-05-02T11:08:33","date_gmt":"2026-05-02T11:08:33","guid":{"rendered":"http:\/\/gilang"},"modified":"2026-06-05T08:45:03","modified_gmt":"2026-06-05T08:45:03","slug":"building-a-kitchen-system-from-scratch","status":"publish","type":"post","link":"https:\/\/kitchenfinance.hu\/en\/konyhai-rendszer-felepitese-teljesen-nullarol\/","title":{"rendered":"Building a Kitchen System Completely From Scratch"},"content":{"rendered":"<p class=\"wp-block-paragraph\"><strong>The situation<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">I joined a restaurant in a management role \u2013 but it quickly became clear that the financial side of the kitchen mattered just as much as the food on the plate. There was no system in place; the software was there, but nobody was using it properly.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>The challenge<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">I had to think as a manager and as a finance person at the same time. The first period was about learning \u2013 understanding the software, building the recipes, working out the pricing logic.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>The solution<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Step by step, I built the complete kitchen cost control system. Every dish got an accurate costing \u2013 it was clear what had to be paid for the ingredients, and what that dish had to sell for to turn a profit. When the maths did not add up, we changed something: the ingredients, the quantities, or we developed a new, more cost-effective dish in its place.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The goal was not for every single dish to deliver maximum profit, but for the menu as a whole to be profitable \u2013 with waste kept to a minimum.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>The result<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Once the system settled in, everything became visible \u2013 the good and the bad alike. If something was off, we knew immediately where the problem was and could correct it straight away. The owner felt the difference too.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>","protected":false},"excerpt":{"rendered":"<p>A newly opened hospitality business had no operational or financial kitchen processes in place.
